Wild yeast fermented with a high percent of whole bunches in the pot. Minimal sulphur and no new oak – indeed, the ‘newest’ oak was four years old.
Ultra-fined grained tannin is but one of this wine’s features. Finesse is another. So too complexity. This is a beautiful wine, crafted to great effect, its flavours of roasted nuts, dried herbs, black pepper and cherry-plum delivered in pure, delicious, impeccable form. It’s enough to make you stand back and marvel. It’s excellent now, and it’s going places.
